Like was mentioned already, too much fuel in the bowl cause not fumes but overflow through the vent tube, if you have a good o-ring between the carb and the air cleaner this can lead to flooding the motor as all the fuel leaks down in the secondary bores and into the intake, if seal is bad or missing you can have gas all over the engine which is a perfect way of barbecuing everything under the hood. Sizzling sound when flooring the throttle after shutoff is from cold fuel hitting too hot of an intake and evaporating almost instantly, common after a long stop-and-go drive where your engine temp is higher than normal. Fix your coolant leak and bring the temp down, that should help. Also ditch the aluminum spacer and get a phenolic one, those don't transfer heat anywhere near as good as aluminum does.
