If the coolant temp sensor or the oil pressure sensor grounds due to faulty wiring and/or a faulty sensor, the light will turn on. By what you are describing, that sounds like your issue.

Couple of possibilities I can think of. Either the radiator was weak, the pressure cap malfunctioned, or the vent tube was stopped up.

A ton of it stays in the heater core and block, even if nothing else comes out of the radiator.
I've never had a problem with these taking coolant. I can usually get 80%+ of what came out back...
