I like the stock size only because they're so cheap. But I figure you can easily stick a 235 75R15 in there too. Any preferences?

what are your goals?
price? handling? ultimate grip on acceleration? ride quality? Are you going with lower (numerically higher) rear gears in the future?
In general 215/70/15 or the aformentioned police size seem best. I'm currently running 205/70/15 without any real issue besides a very slightly off speedo, and have run 205/75/15s without issue either.
85 4 door 351 Civi Crown Victoria - Summer daily driver, sleeper in the making, and wildly inappropriate autocross machine
160KMs 600cfm holley, shorty headers, 2.5" catted exhaust, 255/295 tires, cop shocks, cop swaybars, underdrive pulley, 2.73L gears.
waiting for install: 3.27's, Poly bushings, boxed rear arms, 2500 stall converter, ported e7's, etc
06 Mazda 3 hatch 2.3L 5AT (winter beater that cost more than my summer car)

Assuming you're not intending to keep your stock 15x6.5s ....
- 255/60/15 is very nice and is stock height, and there's still a decent selection in that size. (BFG, Firestone, Cooper come to mind)
- 235/60/16 is also very nice and is stock height, though selection is more limited than for the shorter-than-stock 225/60/16. Kumho ASXs work OK if you never encounter snow or much standing water.2012 Mazda5 Touring | Finally working on the LTD again!
